Bio Mugi Koji, auch als Gersten Koji bekannt, sind Gerstenkörner, die mit Koji Kin, einem edlen japanischen Schimmelpilz namens Aspergillus oryzae, fermentiert wurden. Dieser Prozess dauert über zwei Tage. Anschließend erfolgt eine schonende Trocknung bei niedriger Temperatur über einen Zeitraum von 24 Stunden. Das Ergebnis dieser aufwendigen Fermentation und Trocknung ist ein Ferment mit einem süßlich-pilzigen Geschmack.

Verwendung

Mugi Koji dient zur traditionellen Herstellung von Mugi Miso, Mugi Shio Koji oder Gersten Amazake.

Bio Mugi Koji, auch als Gersten Koji bekannt, kann ähnlich wie Kome Koji für die Herstellung japanischer Fermente verwendet werden. Da die Gerstengraupen mehr Geschmack enthalten als weißer Reis, wird Mugi Koji in Japan in der Regel für Miso verwendet. Mugi Amazake oder Mugi Sake sind aber auch köstlich. Verwende es auch, um Shio Koji herzustellen, oder pulverisiere es mit Salz zu Koji Salz oder Trockenmarinade.
